Cake Decorating

Using sugar as an artistic medium, so much has evolved in the crafts of cake decorating. From popular fondant cakes, gum paste flowers, icing and stringworks, to more recent topics like wafer paper sculpting, Korean buttercream, bean paste piping and sculpting, we seek to stay current by inviting renowned instructors to share their experience in hands-on classes, so you can bring home pretty art pieces, as well as highly precise techniques.

Pre-baked real or faux cake will be used as stated in class descriptions. Hands-on baking will not be taught in cake decorating classes. Please refer to classes in Basic Baking Skills for hands-on learning.

Semi-Naked Cake with Fruits

  • Workshop provides a 6” round sponge cake and pre-made buttercream

  • Learn how to cut cake layers with a baked cake

  • Learn how to fill the cake layers with buttercream and jam or fruits when you have them on hand

  • Learn the technique of semi-masking otherwise known as crumb coating 

  • How to touch up the crumb coats to look like a semi-naked cake

  • Learn how to do chocolate dripping using compound white chocolate

  • Tips and tricks on how to decorate the cake with fresh berries

 

 

Basic Buttercream Masking and Piping

Prerequisite: This workshop expects you to know how to fill and crumb coat a cake therefore it won’t be taught during the class

  • Workshop provides a 5” (5”H) faux/dummy cake on a cake board

  • Learn how to colour buttercream properly using oil based colour paste and get dark colours

  • Learn how to mask the cake, including the techniques on how to mask with an accent colour or doing an ombre effect

  • Learn the techniques in using couplers and bigger piping tips

  • Use different tips to pipe different flowers in order to form little flower bunches and leaves

 

 

Tiered Buttercream Cake and Advanced Piping

  • Workshop provides a 6” (4”H) real cake and a 4” (5”H) faux/dummy cake on a cake board

  • Step by step demonstration on how to properly prep a tier before stacking

  • Demonstration and hands on experience on how to stack a cake tier onto another

  • Learn how to do a textured buttercream finish

  • Learn the piping techniques for borders and ruffles using different piping tips

  • Practice piping different boarders and ruffles onto a flat surface

  • Finish the cake by executing vintage piping and textured buttercream

  • Learn how to prep a cake before fondant application

  • Learn the basics of how to handle fondant

  • Demonstration on how to cover a prepped cake with fondant and instruction on 90° edge shaping

  • Hands on practice on covering the cake with fondant

  • Introduction of different decoration materials, i.e. gum paste, wafer paper, glutinous rice paper, etc. 

  • Learn how to make gum paste appliqués with molds, textured wafer paper and rice paper bunches

  • Texture play and assembling all the prepped decoration onto the cake

 

 

Cartoon Series:
2-Day Advanced Winnie-the-Pooh Tree Stump Cake

Advanced Fondanting and Wafer Paper Sculpture

4-Day Gum Paste Flower Bouquet Professional Course

  • Step-by-step instruction on learning how to create gum paste sugar flowers, including:
    - Open Round Peony
    - Roses

  • Learn to make stamens for peony, bud for roses, ranunculus and daisies

  • Learn to use floral wires for gum paste and make individual petals and leaves

  • Learn to assemble petals into a flower and tie all petals using floral tapes

  • Learn to dust floral petals and assembled flowers, and how to mix the dust to create the best colouring effect

  • Learn to demonstrate the use of steamer and how to seal the dusted colours on leaves and berries

  • Learn to assemble all dusted sugar flowers and create a natural looking floral arrangement

  • Step-by-step instruction on design details

 

Class fee is per person per set of materials, subject to HST.

HANDS-ON CAKE DECORATING CLASS INCLUDES:

  • Pre-baked real or faux cake as stated in class descriptions. Hands-on baking will not be taught in cake decorating classes.

  • All materials needed – the tools and ingredients we use in class are of top quality

  • An apron to use during class (you are welcome to bring your own)

  • Container for you to take away your finished product

  • Certificate of Completion (by request)
