Using sugar as an artistic medium, so much has evolved in the crafts of cake decorating. From popular fondant cakes, gum paste flowers, icing and stringworks, to more recent topics like Korean buttercream, bean paste piping and sculpting, we seek to stay current by inviting renowned instructors to share their experience in hands-on classes, so you can bring home pretty art pieces, as well as highly precise techniques.

In this class, you will create 6 different cupcake designs with detailed decorations. Cake artist Cathy will demonstrate on making of vanilla cupcakes and her signature buttercream. Students will gain understanding of cupcake fondanting, colour adjustments, and learn in detail about making gumpaste flower, bow, crown, leaves, etc and their assembly. Students will bring home the recipes and their finished products.

Korean buttercream flowers are all the hype this year! Whether you are an aspiring cake decorator, or just want to have fun making pretty cupcakes, our new Korean buttercream flower cupcake decoration class is for you. Instructor Cathy designs different buttercream flowers once every 6-9 months, for this edition, you will learn to make:

  • Mini Rose

  • Korean Camellia

  • Wax Flower Blossom

  • Peony with green leaves, pearls and rice flowers

No matter you are a beginner or a seasoned pro, this class offers:

  • Extensive focus on piping techniques

Duration: half day to full day

  • 1 to 1 private class; beginners welcome

  • Student will decorate a 6” round dummy with their choice of design previously agreed

  • Options to use our delicious buttercream chiffon is available from $120 and up

  • Class fee depends on complexity of design and techniques

Fondant Cake 1-to-1 with Your Own 2-Tier Design

Private class ranges from $465 to $899/person
Duration: half day to two days

  • Student will make a 2-tier (5” and 7”) round cake with their choice of design previously agreed

Introduction to Isomalt

 

Half Day Class

You will learn:

  • Cooking and colouring isomalt

  • Techniques in preparing isomalt for pulling

  • Temperature control

  • Basic pulled rose and its petals

  • Pulled leaves and vines

  • Basic techniques in casting isomalt

  • Basic structure of a sugar showpiece

  • Techniques in assembly of isomalt pieces

  • Bring home a small showpiece

Full Day Class

Duration: 9 hours
Format: Hands-on

In addition to content of the half day class:

  • Pulling multi-colour ribbons

  • Making ribbon contours, bows
