Mont Blanc, the Alps’ tallest mountain, sees its sweet miniatures in pastry shops worldwide, typically with piped chestnut threads piled over meringue and cream. Ours is different. Covered with a drift of white coconut shreds hinting the tropical aroma that juxtaposes its snow mountain appearance, our Mont Blanc features ube, the vibrant purple of which oozes anthocyanin that also brings us autumn foliage.
Digging in, the flavours linked with ube open up. Since coconut pairs perfectly with ube, we designed a coconut ube bavarois to encapsulate the smooth crème anglaise centre, in which pieces of roasted yam provide texture. The chiffon sponge, naturally coloured and perfumed with fresh pandan leaves, heightens all these exotic senses.
