A symbol for passion and love, the heart shape seems omnipresent in the month of February. Our modern cut shows its multiple facets, how it could be sweet, how it could be sour, how it could be soft and yielding, how it could have its hidden crunch.

The binding of the famous flavours dubbed “Ispahan” by Pierre Herme — rose, lychee, raspberry — has allured many a heart. Lychee is captured in champagne, while rose petals trapped with feuilletine. In between, raspberries are caught, destinedly, in a soft mousse made with raspberries and strawberries. They say opposite attracts, we say entrapment is indiscriminate.

For your lovely gustatory enjoyment, such is our February feature.
