Cake Decorating

Using sugar as an artistic medium, so much has evolved in the crafts of cake decorating. From popular fondant cakes, gum paste flowers, icing and stringworks, to more recent topics like wafer paper sculpting, Korean buttercream, bean paste piping and sculpting, we seek to stay current by inviting renowned instructors to share their experience in hands-on classes, so you can bring home pretty art pieces, as well as highly precise techniques.

Pre-baked real or faux cake will be used as stated in class descriptions. Hands-on baking will not be taught in cake decorating classes. Please refer to classes in Basic Baking Skills for hands-on learning.

Landscape Cake: Ellirey Island

Landscaping cake, also known as a "terrain cake," is a decorative cake trend that involves creating intricate, miniature scenes or landscapes on the surface of a cake. These cakes often depict natural settings like forests, mountains, gardens, or ponds, using edible materials for realistic detail. This style combines cake decorating with the art of diorama-making, transforming cakes into charming edible worlds with depth and dimension.

  • Workshop provides pre-baked sponges and cream fillings with recipes

  • Learn to build the foundation for the landscape cake

  • Techniques in shaping and icing the foundation to depict nature

  • Learn to create realistic waves and grass patterns, and build a small fondant house

  • Colouring methods and the choice of suitable food colourings

  • Students will make flowers on one 5” faux/dummy cake and one short tier Flower Bouquet

  • Step-by-step instruction on learning how to properly pipe bean paste flowers, including:
    - Ruffle Rose (Level 1A)
    - Anemone (Level 1A)
    - Camellia (Level 1A)
    - Hydrangea (Level 1A)
    - Daisy (Level 1A)
    - Blueberries & Raspberries (Level 1A)

    - Old English Rose (Level 1B)
    - Carnation (Level 1B)
    - Classic Peony (Level 1B)
    - Cosmos (Level 1B)
    - Freesia (Level 1B)
    - Buds & Bouvardia (Level 1B)

  • Learn how to colour bean paste and create various effects such as ombré & colour edges

  • Demonstration on how to mask the cake using bean paste

  • Learn how to create a cohesive looks with bean paste flower designs, and to assemble piped flowers onto a masked cake

Prerequisite: We recommend you to have prior knowledge (Level 1A & Level 1B) with Bean Paste Flower Piping.

  • Students will make flowers on a 2-tier cake consisting of 1 faux tier (dummy) and 1 tier of pre-filled sponge cake

  • Step-by-step instruction on learning how to properly pipe more advanced bean paste flowers, including:
    - Ranunculus (Level 2A)
    - David Austin Rose (Level 2A)
    - Dahlia (Level 2A)
    - Small Rose (Level 2A)
    - Didiscus (Level 2A)
    - Strawberry, 3D leaves (Level 2A)

    - Bloomy Peony (Level 2B)
    - Charity Rose (Level 2B)
    - Scabiosa (Level 2B)
    - Half-opened Peony (Level 2B)
    - Wafer Paper Leaves (Level 2B)

Class fee is per person per set of materials, subject to HST.

HANDS-ON CAKE DECORATING CLASS INCLUDES:

  • Pre-baked real or faux cake as stated in class descriptions. Hands-on baking will not be taught in cake decorating classes.

  • All materials needed – the tools and ingredients we use in class are of top quality

  • An apron to use during class (you are welcome to bring your own)

  • Container for you to take away your finished product

  • Certificate of Completion (by request)
