Chef Michael Kwan (@etkwan), founder of ONSU Bakery in London, will be conducting his first masterclass in Toronto. An award-winning pastry chef based in London, Michael began his culinary journey at the age of 15 before building an impressive career across some of the world’s most respected kitchens, including Ladurée, Hakkasan, The Fat Duck, Hotel Café Royal, and The Dorchester, where he later served as Executive Pastry Chef.
Michael’s work is defined by a balance of precision, creativity, and refined modern execution. Throughout his career, he has earned numerous accolades, including UK Sugar Champion in 2019, European Cup Champion in 2022, and Pastry Chef of the Year in 2024. He has also played a leading role in representing British pastry on the world stage, serving as UK Pastry Team President and leading the team in preparation for the Coupe du Monde de la Pâtisserie 2025 in Lyon, France.
Through ONSU Bakery, Michael presents a distinct vision of contemporary pastry — minimalist, elegant, and deeply personal. Drawing from Asian cultural influences and European pastry techniques, his creations bring together technical mastery, cultural storytelling, and modern flavour combinations. His work reflects a thoughtful approach to pastry where artistry and precision meet, offering a refined experience that is both globally influenced and uniquely his own.

MICHAEL’S BRITISH AFTERNOON TEA (1-DAY MASTERCLASS)
September 21 (Monday), 2026, 10am to 6pm
Join Chef Michael Kwan of ONSU Bakery London for a one-day masterclass dedicated to his modern interpretation of British afternoon tea. Inspired by classic tea-time pastries and refined through Michael’s contemporary pastry style, this class will explore elegant flavour pairings, polished finishing, and practical techniques for creating a memorable afternoon tea selection.

Earl Grey yuzu cake

Walnut and carrot cake
Also learn from chef demonstration and explanation on:

MICHAEL’S SIGNATURE PASTRY (2-DAY MASTERCLASS)
September 19 (Sat) & 20 (Sun), 2026, 10am to 6pm
Join Chef Michael Kwan for an intensive two-day masterclass featuring a collection of signature desserts inspired by ONSU Bakery London. This class highlights Michael’s refined approach to modern pastry, combining Asian-influenced flavours with European techniques, precise execution, and contemporary presentation.
Students will learn and practice hands-on:
Kumquat and yuzu cheesecake
Banana and pecan chocolate bar
Strawberry and coconut shortcake
Basque cheesecake
Hojicha milk pudding
100% black sesame
Oolong and chocolate tart
Pistachio and strawberry éclair
Also learn from chef demonstration and explanation on:
Developing modern flavour combinations inspired by Asian ingredients and European pastry techniques
Balancing sweetness, acidity, bitterness, nuttiness, and texture across multi-component desserts
Preparing, assembling, and finishing refined contemporary pastries
Chef Michael’s approach to workflow, mise en place, and presentation in a professional pastry setting

Selected components may be prepared in advance or demonstrated by the chef to ensure a smooth class flow across the two-day program.
Class fee is in CAD and are subject to Harmonized Sales Tax (HST) in Ontario, which is 13%.

Class price is in CAD. Harmonized Sales Tax (HST) in Ontario, Canada of 13% applies.
Masterclass registration is non-refundable and cannot be transferred as credit towards classes or products at Gusta Cooking Studio and Gusta Supplies. Only in the event of a class cancellation, payment will be fully refunded.
Payment is either by dollar amount or by pre-paid points. Payment methods do not combine.
In the unfortunate event that a registered student cannot attend, the spot can be transferred to another person the student appoints.
In the event of a dispute, the decision of Gusta Cooking Studio (Gusta Haus of Sugar Art Inc.) shall be final and binding.
